carob pancakes and sea buckthorn sauce

ingredients:

pancakes

  • 1 egg (for the vegan version mix 1 1/2 tsp. chia seeds + 1 1/2 tbsp hot water)

  • 1 drop of liquid stevia

  • 1 cup wholegrain flour

  • 1 cup buckwheat flour

  • 2 tbsp carob powder

  • 1 cup (plant) milk

  • 1/2 tbsp baking powder

  • for frying: 2 tbsp vegetable oil

sauce

  • 1 cup plant milk

  • 1 tbsp potato flour or sauce thickener mixed in 1/2 cup water

  • 2 tbsp sea buckthorn powder

  • 2 drops liquid sweetener (or 2 tbsp alternative sweetener)

for your vegan version mix the chia seeds with the water and set aside. then blend all the other ingredients and add the (chia) egg. fry pancakes as per usual on a non-sticking pan with a little vegetable oil. for the sauce I used the same pan, on which I heated the plant milk, then added the sauce thickener, sea buckthorn powder and sweetener and stirred everything until it turned into a thick, sauce-like mixture. pour it over you pancakes and add some fresh fruit or berries if you like! enjoy!
