cranberry superfood pinwheel cookies

are you into healthy (maybe vegan?) eating and superfoods, but still want some delicious cookies to go with your afternoon tea or coffee? try Lottie’s (www.lottieslittlekitchen.weebly.com) cranberry pinwheel cookies! our cranberry powder is a superfood itself, but Lottie added some chia seeds and maca powder for some extra superpowers!

ingredients:

maca dough

  • 1 1/2 tsp. chia seeds + 1 1/2 tbsp hot water

  • 1/3 cup coconut oil (you can replace this with margarine too!)

  • 1/2 cup sugar or alternative sweetener

  • 3 tbsp non-dairy milk

  • 1 tsp. Vanilla extract

  • 1 tsp maca powder (optional)

  • 1 1/3 cup all-purpose flour

  • pinch of salt

cranberry dough

  • 1 1/2 tsp. chia seeds + 1 1/2 tbsp Hot Water

  • 1/2 cup coconut oil

  • 1/2 cup sugar or alternative sweetener

  • 3 tbsp non-dairy milk

  • 1 tsp. vanilla extract

  • 3 tsp natural cranberry powder

  • 1 1/3 cup all-purpose flour

  • pinch of salt

make two doughs in different bowl. for both, first mix the chia seeds and hot water and set aside until they thicken. melt the oil/margarine and add all other ingredients, mix until incorporated evenly. roll both doughs into balls and put into the freezer for a few minutes. this way it will be easier to work with them. then spread them out evenly about 1cm thick. put the cranberry dough on top of the maca dough and roll them slowly and tightly so that there are no cracks or gaps. now you might want to freeze the roll for about half an hour. once the log is firm, slice the cookies about 1 cm thick and place them on a baking sheet. bake at 200°C for about 15 minutes.
