lingonberry, coconut and lime energy balls

ingredients (makes 10 balls):

  • 120g desiccated coconut - plus 2 tbsp extra for coating

  • 85g ground almonds

  • 2 tbsp cold pressed coconut oil, melted

  • 3 tbsp coconut nectar for the vegans or raw honey

  • zest of 2 limes

  • juice of 2 limes

  • a pinch of sea salt

  • 2 tbsp lingonberry powder

place all ingredients in the food processor. process until all ingredients come together. you can add a little more almond meal or a dash of coconut milk depending if the mixture is too wet or dry.

remove mixture from the food processor and place in a medium bowl. cover with cling film and refrigerate for 30 minutes. once cooled, roll a walnut sized portion of the mixture in the palm of your hand. place the balls into a plastic lock seal bag with the 2 extra tablespoons of desiccated coconut. roll all the mixture into balls and then shake the bag to coat each ball with the coconut.
