nutty granola with lingonberry

once you’ve tried this super simple and wholesome homemade granola you never want to buy supermarket brands again. it takes less than 15 minutes to prepare and you’ve got your nutritious granola for the week to add on yoghurt, smoothies bowl or to simply enjoy with milk (we prefer a nut milk, such as almond milk). the heart friendly lingonberry goes beautifully with the nuts and seeds. this really is a winner!

ingredients (serves 8):

  • 100g dried dates (to make a date syrup that gives the granola it’s gorgeous sweetness)

  • 200g jumbo rolled oats

  • 50g dried lingonberries

  • 4 tbsp honey

  • 170g mixed raw nuts (we used cashews and pecans) - make sure they’re unsalted!

  • 30g pumpkin seeds

  • 6 tbsp olive oil

the date syrup is made in minutes by adding a little water in the pan and stirring with the dates. we make enough syrup to keep in the fridge as it’s an amazing sweetener to porridges, smoothies and treats too.

then mix all your ingredients together and spread the mixture on a baking tray and bake for about 30 minutes in 160 degrees - until your granola is dry and crisp. leave to cool and enjoy! store the granola in an airtight container.
