another very finnish recipe by our guest editor lottie (www.lottieslittlekitchen.weebly.com) is a berry soup, that families make in summers and out of frozen berries in winters to serve on their daily oatmeal. lottie created a new recipe so that you can make your own berry soup even without fresh berries - using our natural sea buckthorn powder!

recipe for sea buckthorn and raspberry soup:

  • 500ml water

  • 4 tbsp sea buckthorn powder

  • 2 tbsp frozen (or fresh) raspberries

  • 4 tbsp sugar (or stevia)

  • 2 tbsp potato flour or sauce thickener mixed in 1/2 cup water

boil the water. mix the sauce thickener in a separate cup with 1/2 cup water, then add it to the boiling water. add the sugar, the sea buckthorn powder and the raspberries as soon as the soup starts to thicken. stir for one minute, then turn the stove off and let the soup stand for a few minutes before serving. serve hot on oatmeal, rice porridge or on its own!
