simple oat cookies

these incredibly scrummy and chewy banana and oat cookies are super simple. with added boost of antixidants and vitamins fromthe lingonberry powder! the vegan recipe is shared by 19 year old Sofia from germany  who is as passionate about food as she is about exercise @sofiesfood

ingredients:

  • 1/2 cup oats, preferably gluten-free ones

  • 1 very ripe banana

  • 1 tsp baking powder

  • 2-3 tsp lingonberry powder

  • white vegan chocolate chips or chunks of white vegan chocolate

preheat your oven to 175 C /350 F. start by blending your oats for about 15-30 seconds. pour your oats into a bowl, add your baking powder and lingonberry powder and start mashing your banana. you can also blend it with a bit of water in a blender if you don’t like chunks of banana in your cookies. form little heart-shaped cookies and press a couple of vegan chocolate chips int he middle of the cookie, making sure they are completely covered by the dough. put them in the oven for 15-20 minutes and enjoy hot or cold! the mixture of the berry and white chocolate flavour is what makes this very easy cookies so much better than your regular oat cookies and just incredibly delicious!
