this week our guest editor lottie is taking over our instagram and recipe section! lottie is the owner of @lottieslittlekitchen on instagram and usually posts her recipes in her online kitchen, but this week she’ll be sharing her berrilicious recipes here!

as you know, finnberry is a finnish company and our guest editor is a finnish health blogger, so of course she’ll be giving a finnish twist to her recipes too! the first one up is a very typical breakfast or dessert dish in finland, that can be bought ready-made in supermarkets, is served in schools but is mostly home-made with fresh lingonberries straight from the clean forests! and now you too have the chance to try it using our dried lingonberry powder. best about it? this one contains even way more vitamins (E, K and B3) than the normal finnish lingonberry semolina pudding does, because using our dried powder, the berries don’t have to be cooked and don’t loose their nutritions! and now get ready for some soft and delicious fluffiness in your mouth, that is made in just 30 mins!

recipe ingredients for two protions:

  • 700ml water

  • 1 cup (about 200ml) semolina grains

  • 1/2 cup sugar (or alternative sweetener)

  • 6 tbsp dried lingonberry powder

  • pinch of salt

boil the water and add the semolina grains, sugar and about 1/2 tsp of salt. cook and stir for about 5 minutes, when it thickens set it outside to cool down. the pudding has to be entirely cold before you proceed further. when cooled down, get the pudding back inside and start whipping it with an electronic mixer. slowly add the lingonberry powder. mix until the pudding gets a fluffy texture. serve cold with (plant) milk! enjoy!
